Our Story
We are Sam, Pete and our son Jack. We established Christmas Creek Garlic in 2017 after calling the Scenic Rim our home for a number of years. We pride ourselves in growing organic garlic varieties and making them into the famously delicious smorgasbord of options we have today.
What is black garlic?
Black garlic is a type of aged garlic that is coloured deep brownish black. The process is of East Asian origin. It is made by placing garlic in a warm, moist, controlled environment over the course of several weeks, a process that produces black cloves. Black garlic is used in a wide variety of culinary applications. Black garlic has a sweet and slightly tangy flavour with a mild garlic taste, and a sticky, almost molasses-like texture. This unique flavour and texture profile is due to the process of fermenting.
What is smoked garlic?
For garlic to be cold smoked correctly, it should be exposed for several days so that the smoke has time to settle on the skin. After smoking, the heads take on a golden-brown colour, but the smoke also penetrates the cloves. Smoked garlic has a smooth taste, but a pungent smoky odour.

Culinary uses
Easy Garlic butter sauce can be used on fish, meat, pasta or vegetables – for vegan remove butter and use olive oil. (use fresh, smoked or black garlic)
In a medium pan or small saucepan set over medium heat, melt the butter. Once the butter has melted, add the chopped garlic, lemon juice and parsley. Cook for 1-2 minutes until the garlic has softened but take care not to allow it to burn this will cause a bitter taste. Season the sauce with a pinch of salt and freshly cracked black pepper.
- 1 cup butter
- 4-6 garlic cloves chopped
- 2 tbsp lemon juice
- 2 tbsp chopped fresh parsley
- salt and pepper to taste
What is honey and garlic?
Combining honey and garlic creates a powerful natural remedy with antibacterial, antiviral, antioxidant, and immune-boosting properties.
Culinary uses
- Glazes and Marinades: Garlic-infused honey can be used as a glaze for meats, such as chicken or pork, adding a sweet and savory flavour. It also works well as a marinade, helping to tenderize the meat while imparting a unique taste.
- Dressings and Dips: Incorporate garlic honey into salad dressings or as a dip for appetizers. Its sweet and pungent flavour enhances the overall taste of salads and can be paired with vinegar or mustard for a balanced dressing.
- Sauces: Use garlic-infused honey in sauces for stir-fries or pasta dishes. It can add depth to sauces, making them more complex and flavourful.
- Baking: While it’s not recommended for sweet baked goods, garlic honey can be used in savory baking recipes, such as bread or rolls, to add a hint of garlic flavour.
- Toppings: Drizzle garlic-infused honey over roasted vegetables, grilled meats, or pizza for an extra layer of flavour. It can also be used as a topping for garlic bread or bruschetta.
- Pour over camembert push in garlic and rosemary and bake for a fantastic hot dip.
Seasonings and rubs
Seasonings and rubs can be added to a Grinder to use as a powder in soups, stocks etc or rubbed with oil onto meat fish or vegetables.
Storing garlic
Fresh or smoked Garlic must be kept in a cool, dark, and well-ventilated location such as a cupboard. Black Garlic can be stored for up to 3 weeks at room temperature. It can also be stored in the refrigerator for up to 6 months and wrapped in airtight containers to store in the freezer for 1 year.
Frozen Garlic puree – add the garlic to a food processor, and pulse until the garlic is minced to your liking. Scoop the minced garlic out of the food processor into a small freezer bag and flatten or add oil and freeze in ice cube trays.
